Fish Facts: Lobsters are an excellent choice whether served as a main or side. As many lobster lovers know, the meat isn’t the only treat. Lobster coral, blood, and tomalley are all packed with intense flavor and can be eaten as is or incorporated into another dish. The coral is the red/pink eggs located where the tail meets the head. Lobster blood is white when cooked and closely resembles egg whites. Tomalley is the green substance found in the head of the lobster, this is made up of its liver and pancreas. Our Lobster Roe Paste is made with freshly cooked BC Lobster Coral which is then incorporated with salt, water, and lobster concentrate to enhance flavor and maximize shelf life.
Taste/Cooking: When compared to Salmon Roe or Caviar, Lobster Roe does not carry a heavy salt flavor. In fact, it is quite sweet with a slightly gritty but buttery finish. When incorporating a cooked piece of Lobster Roe into a dish you’ll find the texture to be a tad chewy and the pieces break into irregular chunks.
