Fish Facts: Although this type of salmon is not the largest, it packs a lot of flavour, perfect for experienced fish eaters that appreciate a strong fish flavor. Distinguishable by its bright blood orange color, Coho Salmon truly is a west coast essential.
Taste/Cooking: When compared to other Pacific Salmon, the main differences of Coho are the color of the flesh, texture, and taste. Flesh pigmentation is far brighter and more vibrant in the Coho whereas the texture is not as fatty but is dense and buttery. The flavour of Coho is often described as having a more pronounced fish flavour as opposed to other species. Common methods of preparation include grilling, baking broiling, or pan frying. This fish would pair well with our house fresh herb mix, teriyaki, miso marinades, as well as others.
