Origin: Vancouver, British Columbia

Fish Facts: Geoduck is the largest burrowing clam in the world. Averaging a lifespan of 140 years, while oldest ever recorded is 168 years old, Geoducks are also one of the longest living animals on earth. This type of clam is recognizable by its long siphon that can grow up to 3 feet. This clam is known to have an excellent source of protein, B12, and omega-3 fatty acid.

Taste/Cooking: When compared to Manila or Savory Clams, the texture of Geoduck has a snappy bite and can sometimes be described as crunchy. The flavour is sweet and briny with a mild oceanic taste. Common methods of preparation include, serving raw, as a ceviche, sushi, or chowder. Geoduck is a very versatile ingredient; however, a common pairing would be to serve with garlic/herb butter, lemon, or soy sauce.
