Dover Sole is commonly found in the Mediterranean to the North Sea and are found in the sandy, muddy shallows. This species gets its name from the Port of Dover, which was a prominent fishery in 19th century England. Our Dover Sole is farm raised in Spain using a recirculating aquaculture system. This method of farming is implemented to ensure optimal water quality, healthy fish, and reduced amounts of waste.
Taste/Cooking: The flavour of Dover Sole is described as mild and sweet, perfect for first time fish eaters or those who are hesitant about heavy fish flavours. The texture is firm and consists of small flakes of lean flesh, which gives a surprisingly buttery finish. Common methods of preparation include pan frying, baking, broiling, or grilling.
