Fish Facts: Bay Scallops when compared to Sea Scallops are considerably smaller in size, however flavour and texture remain fairly similar. Bay Scallops can live up to 2 years max whereas Sea Scallops are harvested after 4-5 years with a lifespan of close to 20 years. Bay Scallops are typically found in the shallow waters of bays or estuaries along the Eastern Coast of the USA all the way down to the Gulf of Mexico. Our scallops are farm raised in the Pacific Ocean using suspension nets. This is an environmentally sustainable method of cultivation and harvesting as it does not disturb/damage the bottom habitat and issues with bycatch become obsolete.
Taste/Cooking: Bay Scallops are known for their sweet, delicate, and tender meat. The texture when compared to Sea Scallops is more tender as the adductor muscle is significantly smaller. Because the meat is smaller, Bay Scallops greatly benefit from shorter cooking times and light preparation to avoid toughness, dryness, or broken meat. Common methods of preparation include poaching, sautéing, pan frying, or added to a stew/casserole. This shellfish would pair well with our Garlic & Dill, House Fresh Herb Mix, Miso Paste, as well as others.
