Fish Facts: Skilled and experienced divers swim off the coast of Hokkaido, Japan to harvest our Uni by hand. After harvesting, preparation for market includes removing the eggs which is the most prominent component of its internals. First the processor must detach the chewing organ of the Urchin, also known as Aristotle’s lantern, before scooping out the eggs. Japanese Uni is considered the top tier of all Sea Urchin for its impactable quality and taste. Sea Urchin caught in this area also have a true "Unami" or savory taste due to the high quality kelp grown in this area.
Taste/Cooking: The flavour profile of Uni is often described as sweet, creamy, with a hint of ocean salinity. Preferred methods of consumption include eating it raw, placing on rice/sushi, or incorporated into a soup or sauce for added depth and flavor.
