While there are many different types of Ama Ebi found across the world, this Ama Ebi is sourced directly from the coldest waters of Japan. Caught by Japanese fisherman, this type of Ama Ebi is specifically famous for their extra sweet taste. Ama Ebi are caught in smaller sizes because that is when their sweetness level is at its peak. They are one of the main species of shrimp which are best enjoyed raw, as cooking them will rob them of their full sweetness.
