Fish Facts: Unagi is the Japanese word for Freshwater Eel and is prepared using the Kabayaki process. The Eel or Unagi is spilt in half and dipped into a soy sauce based marinade before being grilled or roasted. This gives the Eel a unique soft thick finish. Unagi is also high in protein, vitamins and Omega-3.

Taste/Cooking: Unagi has a crispy and firm texture with a sweet, succulent rich flavour. To prepare, boil in water for a few minutes until tender and place in the microwave or bake.
