Fish Facts: Atlantic Halibut is the largest and most commercially valuable fish in the Atlantic Ocean. This bottom feeder is found in abundance at depths of 200-500m and is also a part of the flounder family. When hatched, halibut have eyes on either side of their head and swim upright, after about 6 months the left eye migrates to the other side and the fish begins to swim sideways.
Taste/Cooking: Halibut has a delightfully meaty texture which is also flakey. Its’ flavour is mild with a hint of sweetness. Preferred cooking methods include grilling, poaching, deep frying, seared, steamed, or smoked. This fish would go well with our house made fresh herb mix, garlic & dill, and miso paste.
