Fish Facts: In Japanese, ‘Kani’ translates to Crab. The ‘miso’ in Kanimiso refers to the tomalley of the crab which include organs like the pancreas and liver. Not to be confused with the miso paste used for soup. Crab tomalley is known as a delicacy since many agree that it’s the most flavourful part of the entire crab.
Taste and Cooking: Kanimiso has a color ranging from grey to green and carries a heavy umami flavour with a sweet finish. Its texture closely resembles a pate with a creamy mouth feel. This ingredient can be consumed in a multitude of ways. It can be steamed with green onion and eggs or served over rice as sushi. Kanimiso is a versatile ingredient that can be utilized as a garnish or added to any soup, sauce, or stew which requires an extra kick of umami.
