Fish Facts: Our Salt Spring Mussels are grown and raised in the cool, clean coastal waters of the Salish Sea. This area is unique for having an abundance of nutrients. When the time is right, phytoplankton and zooplankton emerge in large quantities which is natural feed for the mussels. Salt Spring Mussels are farmed using the Bouchot (rope grown) method, this is ideal for fast growth, efficient feeding, and keeping internals grit free. The Salt Spring Island hatchery and nursery is the only commercially dedicated mussel hatchery in the world. Studies have shown an increase in growth rate when mussels grow in a hatchery as opposed to their wild counterparts. Compared to PEI Organic Mussels, Salt Springs tend to have a higher meat yield and sweeter finish.
Taste/Cooking: Compared to other shellfish, mussels contain higher levels of omega-3 fatty acids as well as others. For approximately 100g of mussels, you will get ≈20g of protein, ≈23% of your daily recommended dose of Vitamin C, and ≈37% of your daily recommended iron. Common methods of preparation include steaming, braising, or adding to any soup/chowder. Mussels are a very versatile ingredient, however, a popular pairing would to be to serve in a tomato sauce with garlic and fresh herbs or steamed with white wine and onion.
