Facts/Flavor: Japanese White Eggplants are long and slender with a glossy white almost ivory color. White eggplant flesh is white and carries a delightfully spongy feel when raw. When cooked, eggplant takes on a tender and creamy texture. Its spongy consistency also makes it easy to absorb accompanying flavors. White eggplants are known to be creamier, denser, and slightly sweeter than traditional purple eggplants. This fruit is typically consumed cooked. Deep frying, grilling, steaming, or stir frying are all common methods of preparation. Not only are our Japanese purple eggplants wonderfully delicious, but they are also an excellent source of potassium, magnesium, and dietary fiber.
