Taste/Cooking: Jonah cocktail crab claws have a mildly sweet, briny flavor with a firm yet delicate, flaky texture similar to Pacific Dungeness crab but firmer, like Florida stone crab. The sweetness is a result of colder water concentrating sugars, and while they are often enjoyed chilled, they are also versatile enough for use in warm dishes like crab cakes or pasta.
