Fish Facts: Arctic Char is considered a member of the Salmonid family, although similar in appearance to salmon, the flesh is lighter in color and the fish do not grow as large. When farming Arctic Char, farmers must keep their cages stocked at a high density. Wild Arctic Char naturally gather close together in patches of unfrozen water during the winter, therefore they are already accustomed to living in close quarters. Studies have shown that when farmed in low densities, Arctic Char grow poorly and have higher incidences of illness.
Taste/Cooking: Smoked Arctic char is a high-quality, flavorful fish that is often described as a cross between salmon and trout, featuring a delicate texture and slightly sweet, buttery flavor.
Sustainability: Recommended product of Oceanwise.
